Davio’s Kale and Tuscan White Bean Soup Recipe

Soup is one of my fave foods in the colder months and Davio’s Atlanta’s hearty yet healthy Kale and Tuscan White Bean Soup is the perfect way to recommit to healthy eating after the holidays. Kale, which is still enjoying super food popularity, btw, is especially welcome in the winter months when it’s at its peak. Not only does it contain only 33 calories per cup, kale also boasts vitamins A, C and K, and has 3 grams of protein and 2.5 grams of fiber per serving! Davio’s Kale and Tuscan White Bean Soup includes spicy sausage and a variety of nutrient-rich vegetables. (You can also easily make a vegetarian version without the sausage, using vegetable stock instead of chicken stock and adding additional veggies such as zucchini or yellow squash.) Either version of this flavorful and hearty soup will fill you up while helping you shake, shake, shake off the frosty winter chill!

Kale and Tuscan White Bean Soup 

Serves 4

Ingredients:

1 pound spicy sausage

1 can cannellini beans

1 can San Marzano tomatoes crushed

1 bunch Tuscan Kale washed and chopped (stems are ok)

1 white onion diced

4 carrots diced

4 ribs celery diced

2 cloves garlic sliced

2 bay leaves

2 quarts chicken stock

2 tbsp of extra virgin olive oil

Preparation:

In a large pot over medium heat brown the sausage on all sides. Lightly toast garlic in extra virgin olive oil. Add onions and sweat until translucent. Add carrots and celery cook until softened (4-5 min). Add the kale and sautée until wilted. Add the cannellini beans, chicken stock and bay leaves and simmer for 30 minutes. Remove the bay leaf and adjust seasoning with salt and pepper.

Now that you have the recipe, you can make this delicious soup at home (it would be great for a first course for a dinner party!) or enjoy it through the month of February in the beautiful atmosphere at Davio’s restaurant.
